kESAR pEDA.....!!!!
Kesar peda is a simple and easy milk based peda. Paneer and Condensed milk and flavoured with Milk powder and saffron strings. It is an ideal and perfect peda recipe for any festivals like Diwali, Navarathri, holi, raksha bandhan or any other special occasions. Kesar peda is a very delicious and popular Indian sweet dish and saffron added to it gives a unique taste to the peda.
Ingredients:-
1 tin Sweetened condensed milk
1 cup fresh paneer
5 tbsp. milk powder
4 tbsp. butter/ ghee
6-7 saffron threads
2 tbsp. crashed pistachios
Method:-
1. Soak the saffron in warm milk for 10-15 minutes and keep aside.
2 Heat the non stick pan and add the ghee. Once ghee in hot add condensed milk, fresh crumble paneer, milk powder mix all ingredients in low heat for 5 minutes stirring continuously until the all mixture is completely dissolved. The mixture will first liquid and then thickness again. Be careful mixture will be not to burn.
3. Then add the crushed pistachios mix well.
4. Keep stirring till the peda mixture and add the saffron milk to the pan.
5. Again keep stirring continuously peda mixture starts to get thicker and fluffy and roll like a ball without sticking on to the sides of the pan. switch off the flame and keep aside.
6. Peda mixture to cool. shape them into small round balls with a peda mould, round shape cutter if you choice.

Dum Aloo is a yummy potato based simple curry with thick gravy and is an excellent accompaniment with any Indian bread such as chapati phulka, poori or dosa. Try Kashmiri Dum Aloo if you prefer a spicier dish without the onion and tomato paste. Or try Punjabi Dum Aloo if you favor a thick rich gravy made with onions and tomatoes.
Ingredients
6/7 small baby potatoes
1 cup cubed onions
1 cup tomato puree
10 cashew nuts
2-3 green chills
1 1/2 tbsp. chill powder
1/2 tbsp. turmeric powder
1 tbsp. garam masala powder
1 piece of ginger
3-4 garlic
1/4 tbsp. kasuri methi
2-3 cinnamon / cloves
2 tbsp. oil
salt to taste
Method:-
1. Fast wash and peel the potatoes. and keep aside.
2. Make fine paste of onion, ginger, garlic,green chills.
3 Make fine paste of cashews, tomatoes.
4. Heat the pan add oil add cinnamon, cloves just saute them add onion paste onion paste just lightly brown and then add the cashew paste , tomato puree and saute them and the paste thickens slightly.
5. Add chill powder, turmeric,salt, garam masala mix well and cook for 2 minutes. Then add the potatoes mix well
6. Add 3/4 cup water and bring it to boil over medium flame.
7. Cover the lid and cook on a low heat for 8-10 minutes and check the potatoes are soft cooked. make sure the gravy has reached a thick consistency.
8. add crushed kasuri methi. cook for just a minute. switch off the flame.

Dum aloo is ready to serve
Home made Mango thokku is always taste awesome compare to store bought.No Preservatives and artificial coloring.Freshly ground spice gives nice flavor to the pickle. Home made always the best.Here is the Mango thokku recipe.
Ingredients:-
1 Big size raw mango
1 tbsp. Red chill powder
1 tbsp. Mustard seeds powder
1/2 tbsp. cumin seeds powder
1/4 tbsp. fenugreek powder
1/2 tbsp. turmeric powder
salt to taste
2-3 garlic cloves
For Tempering
3 tbsp. oil
1 tbsp. mustard seeds
1 garlic cloves crshed
Method:-
1. chop the fresh of the mango into grated and discard the seed.
2. Add the garlic in the stone pestle and crushed it. (U can also use the grinder. )
3. Add the grated mango lightly crushed it.
4. And add the chill powder, turmeric, mustard ,cumin, fenugreek seeds powder and add salt to taste all the crushed to the coarse paste (Not to a smooth paste).
5. Take the coarse mixture into a bowl and set aside.
6. In a small pan heat the oil. Add the mustard seeds, garlic, red chill. Turn off the heat and add the oil mixture to the mango chutney.

Eat this Mango thokku mixed with rice and ghee. This pickle also can be served as a side dish while serving dal. This thokku goes well with curd rice also. In summer season tasting this pickle / thokku with curd rice will be delicious.
